Oysters with Sour Apple, Lime & Tarragon

A fresh, elegant recipe to “pimp” your oysters for festive occasions!

Ingredients (serves 12 oysters)

  • 12 fresh oysters

  • 1 lime (juice only)

  • 2–3 tbsp sour apple juice (or Granny Smith apple juice)

  • 1–2 tbsp extra-virgin olive oil

  • 1 small bunch of fresh tarragon, finely chopped

  • 1 Granny Smith apple, finely diced (very small pieces)

  • Crushed ice or coarse sea salt — for serving
