Nduja is a spicy pork sausage made in Italy, originally from Calabria and more specifically in the Spilinga region, made from pork meat and chili pepper. The name of this specialty comes from the French word "andouille." It is a spicy spreadable sausage that can be used as a base for tomato sauce, as a topping on pizza, or to accompany your cheese. Personally, I like it with pasta: garlic, oil, and ‘nduja, but here's a great surf and turf recipe that pairs perfectly and can be enjoyed without moderation on a beautiful summer evening with a gentle sea breeze on the terrace
