Where to start? I met Matt Lambert by chance about ten years ago. I had just opened my first restaurant, "La Guinguette en Ville", on the beautiful Place du Béguinage in the center of Brussels and I needed reinforcements in the kitchen.
I immediately knew that Matt was the perfect chef to support me. He is diligent, creative, and above all passionate about what he does. After a while, he received an offer to work as a chef at "l'Improbable". I immediately knew that he was going to turn it into a gem!
He recently took over the reins of the restaurant with his wife Alexandra and together they form a great duo!
The restaurant is quite large, with an industrial bistro atmosphere, and you feel at ease very quickly.
You can enjoy a lunch with starter / main course / dessert throughout the week, as well as choose from the “à la carte” menu.
We started with a small appetizer:
Seabass tartare / sea urchin / lemon cream / mustard seed pickles
A super fresh seabass tartare! The lemon cream perfectly balances the strong iodized taste of the sea urchin, and the mustard pickles add a pleasant crunchy note in the mouth!
First course:
Scallop carpaccio / buttermilk / celery / lemon gel
An indulgent and flavorful starter! The combination of scallops and buttermilk brings a delicious roundness to the palate, and the freshness of celery and lemon gel complements this delicate dish perfectly!
Second course:
Holstein beef tartare / kiwi / miso / wild garlic
As a big fan of beef tartare, I loved the combination with kiwi and miso, which brought the touch of originality I was looking for in this classic reinterpretation!
First main course:
Teriyaki glazed octopus / black pudding / galangal / fennel chimichurri
My favorite one! An incredible blend of flavors all marrying perfectly with the octopus!
Second main course:
Yellow chicken / corn / morels / shizo
The yellow chicken was incredibly tender. The combination with corn and morels brings a delicious and creamy note to the dish, and the shiso adds a touch of freshness!
To sum up, “L’Improbable” is a modern restaurant that features beautiful ingredients in a pleasant atmosphere, with a chef who is passionate about his craft and creates a warm and joyful experience of indulging in delicious food without any fuss!

All of these dishes looks divine, the sea bass tartare and Teriyaki Glazed Octopus had me drooling just from reading the descriptions.
