There's nothing quite like a good ceviche. I've had many variations in my life, but there's one that I particularly enjoy ; you can savor it at a flea market not far from our place in Polop, Spain, at a simple little stand run by Peruvians. Plastic chairs, a relaxed and family-friendly atmosphere, refreshing cold beer, and local music. But it's their dishes that I love sitting down for... arroz con carne, churrasco, and above all, their ceviche! Prepared simply, with onions, chili peppers, sweet potatoes, and, most importantly, a secret leche del tigre that only they know. It strikes the perfect balance between acidity and spice, and it's so fresh that you could easily drink a whole glass of it! It is this ceviche that inspired me today, which you can, of course, adapt to your own taste. I decided to add watermelon because I adore it and it's currently in season, as well as a good dose of vodka to enhance the flavor and give it an extra kick!
